Camembert Cheese Fritters

To succeed in making these fritters, the Camembert cheese must be cold, ripen but not runny.
Cracker instead of bread crumbs can be used.
This dish can either be served as a hors d'oeuvre or as a 'feast', at the end of a meal.
Serve along with a robust enough red wine, such as a Burgundy wine.

| Ingredients | Preparation |
- 1 [1/2-pound / 227-g] Camembert cheese, cut into 8 segments
- 1 pinch Cayenne pepper
- 2 tablespoons [17.5 g] all-purpose flour
- 2 beaten eggs
- 1/2 cup [125 mL] breadcrumbs
- Oil for frying
- 4 apples

- Freeze Camembert cheese segments for 1 hour.
- Mix Cayenne pepper with flour.
- Roll each Camembert segment into flour, then dip into beaten eggs and then coat with breadcrumbs.
- Into a deep-fryer, heat oil to 350°F [180°C] or until a tiny piece of bread browns within 1 minute.
- Fry cheese pieces for approximately 30 seconds, until golden brown.
- Drain onto paper toweling.
- Peel and cut each apple into 4 wedges.
- Onto a serving plate, arrange fritters between apple wedges; serve immediately.
