Cheesy Artichoke Heart Squares
Comments: These squares can either be served hot, or cold.
To freeze these squares, reduce baking time by 15 minutes, cut mixture into squares and freeze, onto a baking sheet. When frozen, transfer squares into a plastic bag.
To serve, hot, reheat squares covered into a preheated 300°F [150°C] oven for 15 minutes. Uncover and bake squares for 5 minutes more.
  • 4 eggs, well beaten
  • 1/4 cup [60 mL] fine dry breadcrumbs
  • 1/2 teaspoon [2.5 mL] salt
  • 1/8 teaspoon [0.5 mL] pepper
  • 1/2 teaspoon [2.5 mL] crushed oregano
  • 3 or 4 drops Tabasco sauce
  • 1/2 cup [125 mL] finely chopped onion
  • 1 clove garlic, finely minced [optional]
  • 2 tablespoons [30 g] butter
  • 2 cups [450 g] grated Cheddar cheese
  • 2 [6-ounce / 170-mL each] jars marinated artichoke hearts, drained and chopped
  • Preheat oven to 350°F [180°C].
  • Mix together beaten eggs, dry breadcrumbs, salt, pepper, oregano and Tabasco sauce; set aside.
  • Brown chopped onion along with minced garlic if desired, into melted butter.
  • Remove from heat; mix in grated Cheddar cheese and chopped drained marinated artichoke hearts.
  • Add to reserved beaten eggs mixture.
  • Evenly pour into a greased 11 x 7 1/2 x 1/2-inch [28 x 19 x 1.3-cm] baking dish.
  • Bake into preheated oven, for 30 minutes.
  • Cut mixture into 1-inch [2.5-cm] squares, and serve.
