Blue Cheese Gelatin
Comments: Serve surrounded with canned pear halves, strawberries, kiwi, grapes, melon cubes, pineapple chunks, orange and/or grapefruit wedges, and/or spiced crabapple, along with crackers.

  • 2 cups [500 mL] cottage cheese
  • 1 tablespoon [7 g] unflavored gelatin
  • 1/4 cup [60 mL] cold water
  • 1/2 cup [125 mL] crumbled Blue cheese
  • 2 tablespoons [30 mL] chopped green onion or parsley
  • 1/4 cup [60 mL] minced nuts
  • 1/4 cup [60 mL] chopped celery
  • 1/2 cup [125 mL] mayonnaise
  • 1/2 cup [125 mL] whipping cream, whipped
  • Few drops green coloring
  • Soften gelatin in cold water for 5 minutes.
  • Stir over hot water until dissolved.
  • Mix together dissolved gelatin, crumbled blue cheese, chopped green onion or parsley, minced nuts, chopped celery and mayonnaise.
  • Gently fold whipped cream into mixture.
  • Well mix in green food coloring.
  • Fill mold[s], and chill.
  • Unmold onto a plate over lettuce leaves to serve.
