Broiled Clams

  • 24 fresh clams
  • 4 tablespoons [60 mL] olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tablespoon [15 mL] breadcrumbs
  • 1 teaspoon [5 mL] freshly chopped parsley or chives
  • 1/4 teaspoon [1 mL] oregano
  • Salt and pepper, to taste
  • Grated Parmesan cheese, to taste
  • Lemon juice, to taste
  • Butter
  • Under cold running water using a stiff brush, scrub clams to remove all grit.
  • Steam open, then remove clams from shells reserving shell halves separately.
  • Heat olive oil into a frypan; brown together minced garlic and chopped onion until golden.
  • Preheat oven broiler until hot.
  • Meanwhile, really finely chop clams; mix together with breadcrumbs, freshly chopped parsley or chives, oregano, salt and pepper.
  • Onto a baking sheet, fill shell halves with mixture.
  • Sprinkle each with grated Parmesan cheese and lemon juice; dot with butter.
  • Brown under preheated hot oven broiler, for approximately 5 minutes.
