- 24 fresh clams
- 4 tablespoons [60 mL] olive oil
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 tablespoon [15 mL] breadcrumbs
- 1 teaspoon [5 mL] freshly chopped parsley or chives
- 1/4 teaspoon [1 mL] oregano
- Salt and pepper, to taste
- Grated Parmesan cheese, to taste
- Lemon juice, to taste
- Butter

- Under cold running water using a stiff brush, scrub clams to remove all grit.
- Steam open, then remove clams from shells reserving shell halves separately.
- Heat olive oil into a frypan; brown together minced garlic and chopped onion until golden.
- Preheat oven broiler until hot.
- Meanwhile, really finely chop clams; mix together with breadcrumbs, freshly chopped parsley or chives, oregano, salt and pepper.
- Onto a baking sheet, fill shell halves with mixture.
- Sprinkle each with grated Parmesan cheese and lemon juice; dot with butter.
- Brown under preheated hot oven broiler, for approximately 5 minutes.
