Watercress Mayonnaise [food processor]

A nice, appetizing dark green sauce.
Servings: 2 to 3 cups [500 to 750 mL], full
    • 1 bunch watercress, stems and leaves
    • 1/4 cup [60 mL] dill, fresh if possible
    • 4 green onions, coarsely chopped
    • 1 tablespoon [15 mL] freshly squeezed lemon juice
    • 1 cup [250 mL] unsweetened mayonnaise
  • Into a food processor, process together watercress, dill, green onions, lemon juice and mayonnaise until of a nice green.
  • Refrigerate until ready to use.
  • Check seasonings before serving.
