Green Mayonnaise

Using a food processor or a blender, this mayonnaise can be ready in just a few minutes.
Otherwise, the ingredients must be very finely chopped.
This mayonnaise, which requires no cooking, is just as good with hot or cold fish.

| Ingredients | Preparation |
- 1/2 cup [125 mL] freshly coarsely chopped green onion or chives
- 1/2 cup [125 mL] freshly coarsely chopped parsley
- 1/2 cup [125 mL] freshly coarsely chopped spinach leaves
- 2 tablespoons [30 mL] freshly squeezed lemon juice
- 1 cup [250 mL] mayonnaise

- Grossly chop green onions or chives, parsley and spinach leaves.
- Transfer into a food processor or a blender; pour in lemon juice.
- Chop into really tiny pieces.
- Transfer into a bowl; well stir in mayonnaise.
- Keep refrigerated, into an airtight container.
