White Wine Mayonnaise

Comments: Excellent with fish.
    • 4 tablespoons [60 mL] white wine
    • 3 egg yolks
    • 1/2 cup [125 mL] oil
  • Into a casserole, boil white wine until reduced to 2 tablespoons [30 mL]; set aside.
  • Well beat egg yolks into a blender or a food processor.
  • Motor running, really slowly pour in oil.
  • Then really slowly pour in reserved white wine, until well blended.
