- 4 tablespoons [60 mL] white wine
- 3 egg yolks
- 1/2 cup [125 mL] oil

- Into a casserole, boil white wine until reduced to 2 tablespoons [30 mL]; set aside.
- Well beat egg yolks into a blender or a food processor.
- Motor running, really slowly pour in oil.
- Then really slowly pour in reserved white wine, until well blended.
