Avocado Mayonnaise [food processor]

Comments: Equally good with fish, seafood or served along with a fondue.
Servings: Approximately 1 1/2 cups [375 mL]
  • 2 avocados, peeled and stoned
  • Juice of 1 lemon juice
  • 1/2 teaspoon [2.5 mL] ginger
  • 1/2 teaspoon [2.5 mL] citronnella
  • 1/4 teaspoon [1 mL] coriander seeds
  • 1/4 cup [60 mL] raisin seed oil
  • 2 green onions, finely minced
  • 1 tomato, finely chopped
  • Into a food processor, puree together avocado meat and lemon juice.
  • Mix in ginger, citronnella and coriander seeds.
  • Slowly pour in raisin seed oil, until smooth.
  • Transfer into a serving bowl; delicately stir in minced green onions and finely chopped tomato.
