- 2 avocados, peeled and stoned
- Juice of 1 lemon juice
- 1/2 teaspoon [2.5 mL] ginger
- 1/2 teaspoon [2.5 mL] citronnella
- 1/4 teaspoon [1 mL] coriander seeds
- 1/4 cup [60 mL] raisin seed oil
- 2 green onions, finely minced
- 1 tomato, finely chopped

- Into a food processor, puree together avocado meat and lemon juice.
- Mix in ginger, citronnella and coriander seeds.
- Slowly pour in raisin seed oil, until smooth.
- Transfer into a serving bowl; delicately stir in minced green onions and finely chopped tomato.
