Corn Oil Mayonnaise

  • 3 tablespoons [45 mL] cornstarch
  • 1 cup [250 mL] water
  • 1 egg
  • 1 cup [250 mL] corn oil
  • 3 tablespoons [45 mL] vinegar
  • 2 tablespoons [30 mL] lemon juice
  • 1 teaspoon [5 g] sugar
  • 1 teaspoon [5 mL] salt
  • 1 teaspoon [5 mL] dry mustard
  • A little paprika
  • Heat together cornstarch and water until translucent.
  • Into a round-bottom bowl, vigourously beat together egg and corn oil.
  • Beat in vinegar, lemon juice, sugar, salt, dry mustard and paprika.
  • Mix in cornstarch mixture.
  • Leave to cool completely.
  • Beat for 1 second, then refrigerate.
