Garlic-Tasting Mayonnaise

  • 1 clove garlic
  • 1/2 teaspoon [2.5 g] sugar
  • 1 teaspoon [5 mL] dry mustard
  • 1 teaspoon [5 mL] salt
  • 2 egg yolks
  • 3 to 4 tablespoons [45 to 60 mL] lemon juice
  • 1 1/2 to 2 cups [375 to 500 mL] olive oil
  • Half garlic then well rub a bowl with garlic halves.
  • Mix in sugar, dry mustard and salt.
  • Add egg yolks and well beat together all ingredients.
  • Ajouter 30 mL [2 cuil. à table] du jus de citron et bien mélanger.
  • Beating, slowly pour olive oil into mixture.
  • Pour in remaining lemon juice to taste, beating until of mayonnaise consistency.
