Beef Stew [pressure cooker]

  • 1 pound beef [454 g] cubes
  • 1/2 cup [70 g] flour
  • 1 [28-ounce / 796-mL] can tomatoes
  • 1 cup [250 mL] or less water
  • 1/2 sweet green pepper, membranes removed and seeded, diced [optional]
  • 1 clove garlic, minced
  • 4 tablespoons [60 mL] beef broth concentrate
  • 1/2 tablespoon [7.5 mL] celery seeds
  • Salt and pepper to taste
  • Into a pressure cooker, brown then sprinkle beef cubes with flour.
  • Brown stirring to brown beef cubes all over without sticking to the bottom of the cooker, until just golden.
  • Immediately remove from heat and pour in tomatoes with juice scraping bottom of cooker.
  • Back on stove, stir in water stirring until sauce is quite clear.
  • Mix in sweet green pepper dices, minced garlic, beef broth concentrate and celery seeds, stirring until mixture starts to boil.
  • Close lid, put on vent and cook for 20 minutes, at 15 pounds [6,8 kg] pressure.
  • Cool down pressure cooker under cold running water to lower the pressure before opening.
