Chopped Meat Rice Dish

  • 2 cups [500 mL] finely chopped cooked meat
  • 1 teaspoon [5 mL] salt
  • 1/2 teaspoon [2.5 mL] pepper
  • 1/4 teaspoon [1 mL] onion juice
  • 1 tablespoon [15 mL] minced parsley
  • 3/4 cup [190 mL] grossly crumbled fresh bread
  • 1 beaten egg
  • 4 cups [1 L] drained boiled rice
  • Preheat oven to 350°F [180°C].
  • Well mix together chopped cooked meat, salt, pepper, onion juice, minced parsley, breadcrumbs and beaten egg.
  • Pour 3 cups [750 mL] drained boiled rice into a well-greased 6-cup [1.5-L] baking dish.
  • Fill dish with chopped meat mixture.
  • Top with remaining boiled rice.
  • Cover thightly; bake into preheated oven, until hot.
  • Unmold unto a serving plate.
