- 4 cups [1 L] cauliflower or broccoli pieces
- 1/4 cup [60 g] margarine or butter
- 1/3 cup [45 g] flour
- 1 cup [250 mL] milk
- 4 ounces [113 g] Old Cheddar cheese, cubed
- 1/2 cup [125 mL] sour cream
- 2 cups [500 mL] cooked ham cubes
- 1 [3-ounce / 85-mL] can mushroom slices, drained [optional]
- 1 cup [250 mL] freshly made breadcrumbs
- 1 tablespoon [15 g] margarine or butter, melted

- Preheat oven to 350°F [180°C].
- Into a casserole, boil together cauliflower or broccoli pieces into just a little salted boiling water, uncovered, until done yet still crunchy; drain well and reserve.
- Melt margarine or butter into the same casserole.
- Stir in flour; pour in milk, all at once.
- Cook mixture, stirring, until really thick and a few bubbles just start to shape on top.
- Stir in Old Cheddar cheese cubes and sour cream, stirring until cheese has completely melted.
- Then stir in ham cubes, mushroom slices and cooked reserved cauliflower or broccoli pieces.
- Pour into an 8-cup [2-L] oven-safe casserole.
- Mix together breadcrumbs and melted margarine or butter; sprinkle all over mixture, into casserole.
- Bake into preheated oven, for 40 minutes.
