- 6 tablespoons [90 g] butter
- 5 1/4 cups [1.3 L] freshly cleaned mushroom slices
- 1 1/2 cups [375 mL] green onion slices
- 6 pounds [2.7 kg] 85% lean ground beef, shaped into 24 [4-ounce / 113-g each] patties
- Salt and pepper, to taste
- 12 English muffins, split
- 28 [1-ounce / 28-g each] slices Colby cheese
- 4 1/2 cups [1 kg] grossly grated Muenster cheese
- 24 slices cooked bacon, crumbled

- Heat butter into a frypan; soften mushroom slices.
- Remove mushroom slices from frypan before adding green onion slices; mix with mushroom slices and reserve.
- Broil ground beef patties until done to taste, turning patties only once; salt and pepper to taste.
- Toast English muffin halves.
- For each burger, top each muffin half with 1 slice Colby cheese.
- Top with a ground beef patty.
- Garnish each patty with 1 tablespoonful [15 mL] mushroom-green onion slices mixture and 3/4 ounce [22 g] grated Muenster cheese.
- Transfer onto a baking sheet and melt cheese under broiler.
- Serve immediately, garnished with 1 slice bacon already crumbled.
