Apple-Stuffed Roasted Pork Rolls

  • 2 pounds [1 kg] round pork
  • 1 tablespoon [15 g] shortening
Stuffing
  • 1 1/2 tablespoons [22.5 mL] salt pork dices
  • 1/2 cup [125 mL] chopped celery
  • 1/2 cup [125 mL] chopped onion
  • 2 teaspoons [10 mL] chopped parsley
  • 1 cup [250 mL] chopped apple
  • 1/2 cup [125 mL] breadcrumbs
  • 1 egg yolk
  • Salt and pepper
  • Prepare stuffing.
  • Preheat oven to 350°F [180°C].
  • Slice pork into 1/8-inch [3-mm] thick slices.
  • Lightly flatten each slice.
  • Spoon a little cooled stuffing in the middle of each slice of pork; roll and secure each roll with toothpicks or strings.
  • Salt and pepper rolls.
  • Melt shortening into a frying pan; lightly brown stuffed pork rolls.
  • Roast into preheated oven until meat is no longer pink inside, for approximately 30 minutes.
Stuffing
  • Into a frypan, melt salt pork dices.
  • Add chopped celery, onion, parsley and apple; cook over low heat, stirring for approximately 5 minutes.
  • Take away from heat.
  • Mix in breadcrumbs and egg yolk until well blended; salt and pepper to taste.
  • Leave to cool completely.
