- 2 pounds [1 kg] round pork
- 1 tablespoon [15 g] shortening
Stuffing
- 1 1/2 tablespoons [22.5 mL] salt pork dices
- 1/2 cup [125 mL] chopped celery
- 1/2 cup [125 mL] chopped onion
- 2 teaspoons [10 mL] chopped parsley
- 1 cup [250 mL] chopped apple
- 1/2 cup [125 mL] breadcrumbs
- 1 egg yolk
- Salt and pepper

- Prepare stuffing.
- Preheat oven to 350°F [180°C].
- Slice pork into 1/8-inch [3-mm] thick slices.
- Lightly flatten each slice.
- Spoon a little cooled stuffing in the middle of each slice of pork; roll and secure each roll with toothpicks or strings.
- Salt and pepper rolls.
- Melt shortening into a frying pan; lightly brown stuffed pork rolls.
- Roast into preheated oven until meat is no longer pink inside, for approximately 30 minutes.
Stuffing
- Into a frypan, melt salt pork dices.
- Add chopped celery, onion, parsley and apple; cook over low heat, stirring for approximately 5 minutes.
- Take away from heat.
- Mix in breadcrumbs and egg yolk until well blended; salt and pepper to taste.
- Leave to cool completely.
