Beef Strips and Sweet Peppers on Rice
Comments: It is easy to cut flank steak into really fine strips when partially frozen.

  • 1 1/2 cups [375 mL] rice
  • 1 tablespoon [15 mL] oil
  • 1 [1/2-pound / 227-g] flank steak, into really fine strips
  • 1 medium onion, sliced
  • 1 medium sweet green pepper, membranes removed and seeded, sliced
  • 1 medium sweet red pepper, membranes removed and seeded, sliced
  • 1 1/2 teaspoons [7.5 mL] garlic powder
  • 1/2 cup [125 mL] water
  • 1/4 cup [60 mL] lime juice
  • 1 to 2 teaspoons [5 to 10 mL] Tabasco sauce
  • 1/4 teaspoon [1 mL] black pepper
  • Boil rice into salted boiling water until 'al dente'.
  • Meanwhile, into a large frypan into really hot oil, brown together steak strips and onion, sweet green pepper and sweet red pepper slices, sprinkled with garlic powder.
  • Mix in water, lime juice, Tabasco sauce and black pepper.
  • Bring mixture to a boil; lower heat and leave to simmer for 5 minutes.
  • Top hot drained rice with steak strips mixture, and serve.
