Chocolate Mud Muffins

Three [3] ounces [90 mL] capacity muffin tins.

  • 6 ounces [180 g] butter
  • 6 ounces [180 g] dark cooking chocolate, chopped
  • 1 cup [250 mL] firmly packed brown sugar
  • 3 eggs [2 ounces / 60 mL]
  • 1 teaspoon [5 mL] vanilla
  • 1 cup [140 g] flour
  • 2 tablespoons [30 mL] cocoa powder
  • 1/4 cup [60 mL] milk
  • 3 1/2 ounces [100 g] macadamia or other nuts, roughly chopped
  • Preheat oven to 350°F [180°C].
  • Well grease and line muffin tins with paper or foil cups.
  • Melt together butter and chopped dark chocolate, over hot water, into a double boiler.
  • Stir in brown sugar, stirring well to dissolve lumps.
  • Add eggs and vanilla.
  • Beat well.
  • Sift in flour and cocoa powder.
  • Stir in milk, then chopped nuts.
  • Fill muffin tins with mixture.
  • Bake into preheated oven for approximately 20 to 25 minutes.
  • Cool on racks.
