- 2 cups [280 g] flour
- 1 tablespoon [15 mL] baking powder
- 1/4 teaspoon [1 mL] salt
- 1/2 cup [125 mL] brown sugar
- 2 eggs
- 3/4 cup [190 mL] milk
- 2 well-ripe bananas, mashed
- 1/2 cup [125 mL] peanut butter
- 2 tablespoons [30 mL] oil

- Mix together flour, baking powder, salt and brown sugar.
- Into a clean bowl, beat together eggs, milk, mashed bananas, peanut butter and oil.
- Pour eggs mixture into flour mixture; stir until just moistened.
- Fill greased muffin tins with mixture.
- Bake into a preheated 375°F [190°C] oven, for 20 minutes.
