Banana Peanut Butter Muffins

  • 2 cups [280 g] flour
  • 1 tablespoon [15 mL] baking powder
  • 1/4 teaspoon [1 mL] salt
  • 1/2 cup [125 mL] brown sugar
  • 2 eggs
  • 3/4 cup [190 mL] milk
  • 2 well-ripe bananas, mashed
  • 1/2 cup [125 mL] peanut butter
  • 2 tablespoons [30 mL] oil
  • Mix together flour, baking powder, salt and brown sugar.
  • Into a clean bowl, beat together eggs, milk, mashed bananas, peanut butter and oil.
  • Pour eggs mixture into flour mixture; stir until just moistened.
  • Fill greased muffin tins with mixture.
  • Bake into a preheated 375°F [190°C] oven, for 20 minutes.
