- 2 cups [280 g] all-purpose flour
- 1/2 cup [125 mL] whole wheat flour
- 1 1/2 teaspoons [7.5 mL] baking powder
- 1/2 teaspoon [2.5 mL] baking soda
- 1 teaspoon [5 mL] salt
- 1/2 cup [100 g] sugar
- 1/2 cup [125] grated coconut
- 2 medium-size eggs
- 1/2 cup [125 mL] vegetable oil
- 1 cup [250 mL] mashed ripe banana
- 1/3 cup [80 mL] orange juice
- 1 tablespoon [15 mL] orange rind

- Preheat oven to 375°F [190°C].
- Grease and flour muffin tins; set aside.
- Into a large bowl, mix together all-purpose flour, whole wheat flour, baking powder, baking soda, salt and sugar.
- Mix in grated coconut.
- Make a well in the center; reserve.
- Into a clean bowl, beat eggs.
- Add, stirring, oil, mashed banana, orange juice and orange rind.
- Pour into the center of flour mixture.
- Using a fork, mix all ingredients together, until just moistened.
- Fill muffin tins with batter.
- Bake into preheated oven for 25 to 30 minutes, until golden brown.
- Unmold.
- Serve hot.
