Tropical Muffins

  • 2 cups [280 g] all-purpose flour
  • 1/2 cup [125 mL] whole wheat flour
  • 1 1/2 teaspoons [7.5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1 teaspoon [5 mL] salt
  • 1/2 cup [100 g] sugar
  • 1/2 cup [125] grated coconut
  • 2 medium-size eggs
  • 1/2 cup [125 mL] vegetable oil
  • 1 cup [250 mL] mashed ripe banana
  • 1/3 cup [80 mL] orange juice
  • 1 tablespoon [15 mL] orange rind
  • Preheat oven to 375°F [190°C].
  • Grease and flour muffin tins; set aside.
  • Into a large bowl, mix together all-purpose flour, whole wheat flour, baking powder, baking soda, salt and sugar.
  • Mix in grated coconut.
  • Make a well in the center; reserve.
  • Into a clean bowl, beat eggs.
  • Add, stirring, oil, mashed banana, orange juice and orange rind.
  • Pour into the center of flour mixture.
  • Using a fork, mix all ingredients together, until just moistened.
  • Fill muffin tins with batter.
  • Bake into preheated oven for 25 to 30 minutes, until golden brown.
  • Unmold.
  • Serve hot.
