- 2 cups [280 g] all-purpose flour
- 1 tablespoon [15 mL] baking powder
- 1 teaspoon [5 mL] cinnamon
- 1/2 teaspoon [2.5 mL] salt
- 1 egg
- 1 1/4 cups [310 mL] milk
- 1/2 cup [125 mL] well packed brown sugar
- 1/3 cup [75 g] melted margarine
- 1 teaspoon [5 mL] vanilla
- 2 medium-size apples, peeled or unpeeled, cored and grated
Streusel Topping
- 1/4 cup [60 mL] well packed brown sugar
- 1/2 teaspoon [2.5 mL] cinnamon

- Into a bowl, stir together flour, baking powder, cinnamon and salt.
- Into a separate bowl, whisk together egg, milk, brown sugar, margarine and vanilla; stir in grated apples.
- Pour into dry ingredients, stirring just until moistened.
- Spoon batter evenly into 12 greased or paper-lined large muffin tins.
- Combine streusel topping ingredients; sprinkle on top of each muffin.
- Bake into a preheated 400°F [200°C] oven for 20 minutes, until top springs back when lightly touched.
