Peanut Butter Banana Muffins

  • 2 cups [280 g] flour
  • 1 tablespoon [15 mL] baking powder
  • 1/4 teaspoon [1 mL] salt
  • 1/2 cup [125 mL] brown sugar
  • 1/2 cup [125 mol] peanut butter
  • 2 tablespoons [30 mL] oil
  • 2 eggs
  • 3/4 cup [190 mL] milk
  • 2 bananas, mashed
  • Preheat oven to 375°F [190°C].
  • Into a large bowl, mix together flour, baking powder and salt.
  • Into a clean bowl, beat together peanut butter, oil, eggs, milk and mashed bananas.
  • Add peanut butter mixture to flour mixture, until just moistened.
  • Spoon into buttered muffin tins.
  • Bake into preheated oven for 20 minutes.
  • Serve.
