Cheddar Cheese Apple Muffins, Apple Cinnamon Butter

  • 2 cups [280 g] flour
  • 1/2 cup [125 mL] sugar
  • 1 tablespoon [15 mL] baking powder
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] salt
  • 1 1/2 cups [340 g] grated Cheddar cheese
  • 1 cup [250 mL] plain yogurt
  • 1/4 cup [60 g] melted margarine or butter
  • 2 beaten eggs
Apple Cinnamon Butter
  • 1/2 cup [115 g] softened butter
  • 1/2 cup [125 mL] apple jelly
  • 1/4 teaspoon [1 mL] cinnamon
  • Mix together flour, sugar, baking powder, baking soda and salt.
  • Mix in grated Cheddar cheese.
  • Into a clean bowl, beat together yogurt, margarine or butter and beaten eggs.
  • Add yogurt mixture, all at once, into flour mixture.
  • Stir just enough to dampen.
  • Fill 12 large, greased muffin tins with mixture.
  • Bake into a preheated 400°F [200°C] oven for 18 to 20 minutes, until lightly browned.
Apple Cinnamon Butter
  • Cream butter.
  • Mix in apple jelly and cinnamon.
