Chocolate Raisin Muffins

  • 1/2 cup [115 g] butter or shortening
  • 1 cup [250 mL] brown sugar
  • 2 eggs, well beaten
  • 2 cups [280 g] sifted flour
  • 1/2 teaspoon [2.5 mL] salt
  • 2 teaspoons [10 mL] baking powder
  • 1/4 teaspoon [1 mL] baking soda
  • 2 tablespoons [30 mL] cocoa powder
  • 1/2 cup [125 mL] milk
  • 1/2 cup [125 mL] raisins, floured
  • Preheat oven to 350°F [180°C].
  • Cream together butter or shortening and brown sugar.
  • Mix in beaten eggs.
  • Into a clean bowl, mix together flour, salt, baking powder, baking soda and cocoa powder.
  • Delicately fold dry ingredients into eggs mixture, being careful not to overbeat.
  • Stir in floured raisins.
  • Fill muffin tins up to 2/3rds.
  • Bake into preheated oven, for approximately 30 minutes.
