- 2 cups [280 g] flour, sifted
- 1/4 cup [60 g] sugar
- 4 teaspoons [20 mL] baking powder
- 3/4 teaspoon [3.75 mL] salt
- 1 cup [250 mL] milk
- 1/4 cup [60 g] melted shortening
- 1 egg, beaten

- Preheat oven to 375°F [190°C].
- Sift together flour, sugar, baking powder and salt.
- Mix together milk, melted shortening and beaten egg; pour into dry ingredients.
- Stir immediately, until just wet [mixture should be somewhat lumpy].
- Fill greased muffin tins, up to 2/3rds.
- Bake into preheated oven, for 20 to 25 minutes.
