Easy Muffins
Servings: 10 to 12 muffins

  • 2 cups [280 g] flour, sifted
  • 1/4 cup [60 g] sugar
  • 4 teaspoons [20 mL] baking powder
  • 3/4 teaspoon [3.75 mL] salt
  • 1 cup [250 mL] milk
  • 1/4 cup [60 g] melted shortening
  • 1 egg, beaten
  • Preheat oven to 375°F [190°C].
  • Sift together flour, sugar, baking powder and salt.
  • Mix together milk, melted shortening and beaten egg; pour into dry ingredients.
  • Stir immediately, until just wet [mixture should be somewhat lumpy].
  • Fill greased muffin tins, up to 2/3rds.
  • Bake into preheated oven, for 20 to 25 minutes.
