Yogurt Bran Blueberry Muffins

  • 2 cups [500 mL] plain yogurt
  • 2 teaspoons [10 mL] baking soda
  • 2 eggs
  • 1 1/2 cups [375 mL] brown sugar
  • 1 cup [250 mL] vegetable oil
  • 2 teaspoons [10 mL] vanilla
  • 2 cups [500 mL] bran cereals
  • 2 cups [280 g] flour
  • 2 teaspoons [10 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 1 cup [250 mL] blueberries
  • Preheat oven to 350°F [180°C].
  • Mix together yogurt and baking soda; set aside.
  • Using an electric mixer, beat together eggs, brown sugar, vegetable oil and vanilla.
  • Stir in bran cereals.
  • Mix together flour, baking powder and salt; fold into eggs mixture, alternately with yogurt mixture.
  • Stir in blueberries.
  • Fill muffin tins up to 2/3rds.
  • Bake into preheated oven, for 35 minutes.
