Carrot Cinnamon Muffins

  • 1 1/2 cups [210 g] flour
  • 1 teaspoon [5 mL] baking powder
  • 1 teaspoon [5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1/2 cup [125 mL] well-packed brown sugar
  • 1/3 cup [80 mL] vegetable oil
  • 1 egg
  • 2/3 cup [160 mL] plain yogurt
  • 1 cup [250 mL] grated carrots
  • Preheat oven to 350°F [180°C].
  • Into a medium-size bowl, sift together flour, baking powder, baking soda and cinnamon; reserve.
  • Into a clean bowl, beat together vegetable oil, egg and plain yogurt; mix in grated carrots.
  • Pour into dry ingredients, stirring just enough to wet dry ingredients.
  • Fill muffin tins up to the rim with dough.
  • Bake into preheated oven, for 20 minutes.
