- 1 1/2 cups [210 g] flour
- 1 teaspoon [5 mL] baking powder
- 1 teaspoon [5 mL] baking soda
- 1/2 teaspoon [2.5 mL] cinnamon
- 1/2 cup [125 mL] well-packed brown sugar
- 1/3 cup [80 mL] vegetable oil
- 1 egg
- 2/3 cup [160 mL] plain yogurt
- 1 cup [250 mL] grated carrots

- Preheat oven to 350°F [180°C].
- Into a medium-size bowl, sift together flour, baking powder, baking soda and cinnamon; reserve.
- Into a clean bowl, beat together vegetable oil, egg and plain yogurt; mix in grated carrots.
- Pour into dry ingredients, stirring just enough to wet dry ingredients.
- Fill muffin tins up to the rim with dough.
- Bake into preheated oven, for 20 minutes.
