Double Chocolate Muffins

  • 2 cups [280 g] all-purpose flour
  • 1/3 cup [80 mL] sweetened cocoa powder
  • 1/2 cup [100 g] sugar
  • 3 teaspoons [15 mL] baking powder
  • 1 1/3 cups [330 mL] chocolate chips
  • Pinch of salt
  • 2 beaten eggs
  • 1 cup [250 mL] milk
  • 1/4 cup [60 mL] oil
  • Preheat oven to 375°F [190°C].
  • Into a bowl, mix together flour, sweetened cocoa powder, sugar, baking powder, chocolate chips and salt.
  • Reserve.
  • Into a large bowl, beat together eggs, milk and oil.
  • Slowly fold dry ingredients into eggs mixture; mix delicately just until well blended.
  • Fill 12 oiled muffin tins up to 2/3rds with dough.
  • Bake into preheated oven for approximately 20 minutes, until a toothpick comes out clean from the centre of the muffins.
  • Leave to cool for 10 minutes before unmolding, and serve.
