Best-Ever Muffins
Comments: Light, delicate, flavorful muffins, excellent plain, filled with raisins, nuts or dates, or topped with jam or jelly.

  • 1 3/4 cup [245 g] sifted all-purpose flour
  • 1/4 cup [60 g] sugar
  • 2 1/2 teaspoons [12.5 mL] baking powder
  • 3/4 teaspoon [3.75 mL] salt
  • 1 egg, well-beaten
  • 3/4 cup [190 mL] milk
  • 1/3 cup [80 mL] salad oil or melted shortening [75 g]
  • 1/2 to 3/4 cup [125 to 190 mL] raisins, chopped nuts or dates [optional]
    or
    12 teaspoons [60 mL] any tart jam or jelly [optional]
  • Preheat oven to 400°F [200°C].
  • Sift together flour, sugar, baking powder and salt into a bowl.
  • Make a well into the middle.
  • Combine beaten egg with milk and salad oil or melted shortening.
  • Pour all at once into the middle of mixed dry ingredients.
  • If desired, add raisins, chopped nuts or dates.
  • Stir quickly, to just moisten dry ingredients.
  • Evenly spoon batter into 12 greased muffin cups, up to 2/3rds.
  • If desired, spoon 1 teaspoon [5 mL] tart jam or jelly in the middle of each muffin.
  • Bake into preheated oven, for approximately 25 minutes.
  • Leave to cool slightly before serving, or unmolding onto wire racks to cool completely.
