Chocolate Chip or Peanut Butter Banana Muffins

  • 1 cup [200 g] sugar
  • 1/2 cup [125 mL] vegetable oil
  • 2 eggs, beaten
  • 3 medium bananas, crushed
  • 3 tablespoons [45 mL] sour cream
  • 1 teaspoon [5 mL] baking soda
  • 2 cups [280 g] flour
  • 6 ounces [170 g] chocolate chips or peanut butter [3/4 cup / 190 mL]
  • Preheat oven to 400°F [200°C].
  • Following given order, mix together sugar, vegetable oil, beaten eggs, crushed bananas, sour cream, baking soda, flour and chocolate chips or peanut butter.
  • Fill muffin tins up to 3/4th with dough.
  • Bake muffins into preheated oven, for 20 to 25 minutes.
