Kiwi Pecan Muffins

  • 1 egg
  • 3/4 cup [150 g] sugar
  • 3/4 cup [190 mL] milk
  • 1 cup [250 mL] bran cereals
  • 1 cup [140 g] flour
  • 1 tablespoon [15 mL] baking powder
  • Pinch of salt
  • Pinch of nutmeg
  • 2 tablespoons [30 g] melted butter
  • 3 peeled kiwis, finely diced
  • 1/2 cup [125 mL] chopped pecans
  • Preheat oven to 400°F [200°C].
  • Beat together egg and sugar.
  • Mix in milk and bran cereals.
  • Fold in already mixed together flour, baking powder, salt and nutmeg.
  • Thoroughly mix in melted butter, kiwi dices and chopped pecans.
  • Fill 12 paper-lined muffin tins with dough.
  • Bake into preheated oven, for 20 to 25 minutes.
