Peach Muffins
Comments: A rich, mildly spicy muffin treat!

  • 2 cups [280 g] all-purpose flour
  • 4 tablespoons [60 mL] firmly packed brown sugar
  • 1 tablespoon [15 mL] baking powder
  • 1/2 cup [125 mL] freshly finely diced peeled peaches or well-drained diced canned peach pieces
  • 1/4 teaspoon [1 mL] baking soda
  • 1/8 teaspoon [0.5 mL] allspice
  • 1 cup [250 mL] sour cream
  • 1 egg
  • 1/4 cup [60 g] melted butter or margarine, or vegetable oil [60 mL]
  • Preheat oven to 400°F [200°C].
  • Grease 12 large muffin cups.
  • Into a large bowl, mix together flour, brown sugar and baking powder.
  • Then add chopped peaches, baking soda and allspice; thoroughly flour peach dices.
  • Into a clean bowl, combine sour cream, egg and melted butter or margarine or vegetable oil, until uniform in color.
  • Pour liquids ingredients into dry ingredients and stir until moist yet lumpy.
  • Evenly spoon dough into greased muffin cups.
  • Bake into preheated oven for 25 minutes.
