Peach Brown Sugar Muffins
Comments: Excellent sligltly or completely cooled.
When baking muffins, never fill muffin cups more than 2/3 full and never leave an empty cup; pour a little water into any empty cup being careful when removing pans from oven.

  • 4 cups [560 g] flour
  • 1/4 teaspoon [1 mL] allspice
  • 2/3 cup [160 mL] brown sugar
  • 1 teaspoon [5 mL] salt
  • 2 tablespoons [30 mL] baking powder
  • 2 eggs
  • 1/2 cup [125 mL] vegetable oil
  • 2 cups [500 mL] sour cream
  • 1 cup [250 mL] freshly peeled peach dices
  • Grease 20 muffins cups.
  • Preheat oven to 200°C [400°F].
  • Mix together flour, allspice, brown sugar, salt and baking powder into a large bowl.
  • Beat together eggs, vegetable oil and sour cream into a clean bowl.
  • Delicately stir in peach dices.
  • Stir mixture into dry ingredients until just combined.
  • Evenly spoon into greased muffin cups.
  • Bake into preheated oven for 20 to 25 minutes.
