- 4 cups [560 g] flour
- 1/4 teaspoon [1 mL] allspice
- 2/3 cup [160 mL] brown sugar
- 1 teaspoon [5 mL] salt
- 2 tablespoons [30 mL] baking powder
- 2 eggs
- 1/2 cup [125 mL] vegetable oil
- 2 cups [500 mL] sour cream
- 1 cup [250 mL] freshly peeled peach dices

- Grease 20 muffins cups.
- Preheat oven to 200°C [400°F].
- Mix together flour, allspice, brown sugar, salt and baking powder into a large bowl.
- Beat together eggs, vegetable oil and sour cream into a clean bowl.
- Delicately stir in peach dices.
- Stir mixture into dry ingredients until just combined.
- Evenly spoon into greased muffin cups.
- Bake into preheated oven for 20 to 25 minutes.
