- 1 3/4 cups [245 g] all-purpose flour
- 1 teaspoon [5 mL] baking soda
- /4 teaspoon [1 mL] salt
- 1/2 cup [115 g] butter, softened
- 1 1/4 cups [260 g] sugar
- 2 eggs
- 1/4 cup [60 mL] sour cream
- 1 cup [250 mL] mashed bananas [3 medium]

- Preheat oven to 400°F [200°C].
- Mix together flour, baking soda and salt into a large bowl.
- Make a well in the center.
- Into a clean bowl, cream together softened butter, sugar and one of the eggs.
- Beat in second egg.
- Mix in sour cream and mashed bananas.
- Pour into the well; stir just to mix, ignoring lumps.
- Fill greased muffin cups 3/4th full.
- Bake into preheated oven, for 20 to 25 minutes.
- Leave muffins to cool in pan for 5 minutes.
- Serve muffins hot, or unmold and leave muffins to cool onto wire racks.
