Sour Cream Banana Muffins

  • 1 3/4 cups [245 g] all-purpose flour
  • 1 teaspoon [5 mL] baking soda
  • /4 teaspoon [1 mL] salt
  • 1/2 cup [115 g] butter, softened
  • 1 1/4 cups [260 g] sugar
  • 2 eggs
  • 1/4 cup [60 mL] sour cream
  • 1 cup [250 mL] mashed bananas [3 medium]
  • Preheat oven to 400°F [200°C].
  • Mix together flour, baking soda and salt into a large bowl.
  • Make a well in the center.
  • Into a clean bowl, cream together softened butter, sugar and one of the eggs.
  • Beat in second egg.
  • Mix in sour cream and mashed bananas.
  • Pour into the well; stir just to mix, ignoring lumps.
  • Fill greased muffin cups 3/4th full.
  • Bake into preheated oven, for 20 to 25 minutes.
  • Leave muffins to cool in pan for 5 minutes.
  • Serve muffins hot, or unmold and leave muffins to cool onto wire racks.
