Master Pilaf

IngredientsPreparation
  • 1 tablespoon [15 g] butter
  • 2 tablespoons [30 mL] oil
  • 1 onion, chopped
  • 1 cup [250 mL] any grain [your choice - see below]
  • Broth, flavor to taste
Special Touches
  • 1/4 pound [113 g] freshly sliced mushrooms
  • 1 carrot, diced
  • 1 1/2 teaspoons [7.5 mL] marjoram, thyme or rosemary
  • Canadian bacon cut into 1/4-inch [6-mm] cubes, to taste
  • 1/4 cup [60 mL] raisins
    +
    1/2 cup [125 mL] thawed frozen peas
  • Into a casserole, heat together butter and oil, over medium heat.
  • Stir-fry chopped onion for 5 minutes.
  • Mix in chosen grain; stir-fry for 1 minute.
  • Pour in broth, cover and lower heat to low.
  • Simmer until tender.
Special Touches
  • Three [3] to 4 minutes before adding grain, stir-fry mushroom slices along with chopped onion.

  • Two [2] to 3 minutes before adding grain, stir-fry carrot dices along with chopped onion.
    or
  • Just before adding grain, stir in marjoram, thyme or rosemary.
    or
  • Ten [10] minutes before the end of grain cooking time, mix in Canadian bacon cubes.
    or
  • Five [5] minutes before the end of grain cooking time, mix in raisins and thawed frozen peas.

Bulgur 2 cups [500 mL] 25 to 30 minutes
Millet 2 1/2 cups [625 mL] 45 minutes
Quinoa 2 cups [500 mL] 30 to 35 minutes
