Pastry Rosettes from Anticosti Island

Typical recipe from the Island.
A rosette iron is needed.
Serve, along with crab or lobster salad.

| Ingredients | Preparation |
- 1 teaspoon [5 g] sugar
- 1 teaspoon [5 mL] salt
- 1 cup [140 g] flour
- 2 eggs
- 1 cup [250 mL] milk
- Oil
|
- Mix together sugar, salt and flour.
- Add eggs and milk; beat into a thin batter.
- Heat rosette iron into hot oil.
- Dip hot iron into batter, down to 1/4 inch [1 cm] from top of iron.
- Deep-fry into hot 375°F [190°C] oil, until lightly browned.
