Pastry Rosettes from Anticosti Island

A rosette iron is needed.
Serve, along with crab or lobster salad.

  • 1 teaspoon [5 g] sugar
  • 1 teaspoon [5 mL] salt
  • 1 cup [140 g] flour
  • 2 eggs
  • 1 cup [250 mL] milk
  • Oil
  • Mix together sugar, salt and flour.
  • Add eggs and milk; beat into a thin batter.
  • Heat rosette iron into hot oil.
  • Dip hot iron into batter, down to 1/4 inch [1 cm] from top of iron.
  • Deep-fry into hot 375°F [190°C] oil, until lightly browned.
