Polenta

Comments: There are quite a few versions of this Italian dish.
Serve along with a spaghetti or any other desired sauce. I even served it with 'chili con carne' [made of black turtle beans] and it was delicious!

  • 2 1/4 cups [560 mL] water
  • 190 mL [3/4 cup] cornflour
  • 190 mL [3/4 cup] cold water
  • 1/4 cup [60 mL] salt
  • Bring water to a boil.
  • Meanwhile, mix together cornflour, cold water and salt; slowly stir into boiling water.
  • Stir until boiling.
  • Reduce heat to low, cover and simmer for 15 minutes, stirring from time to time.
  • Pour into an 8 x 8 x 2-inch [20 x 20 x 5-cm] dish; cool for 1 hour.
  • Refrigerate, covered with plastic wrap, overnight.
  • Cut polenta into 4 squares, then cut each square into 2 triangles.
  • Bake into a preheated 400°F [200°C] oven for 10 minutes, covered with al foil.
