Homemade Mascarpone Cheese

Comments: It is not always easy to find this cheese, so it is better to make it.
This cheese is used to make Tiramisu cakes.
It is also often served along with poached fruits.
Servings: 2 cups [500 mL]

  • 2 cups [500 mL] thick cream [35% m.s.g.]
  • 1/8 teaspoon [0,5 mL] tartaric acid [found at drugstores]
  • Into a casserole, heat cream over medium heat until a candy thermometer registers 180°F [82°C].
  • Turn off the heat; mix in tartaric acid, stirring for 2 minutes.
  • Leave to cool.
  • Pour mixture into a clean container.
  • Refrigerate for 72 hours.
  • Pour mixture into a stainer, already lined with a few layers paper toweling.
  • Leave to drip for 2 1/2 hours, until firm.
