Cheesy Spinach Tofu Squares

  • 3 eggs
  • 6 tablespoons [90 mL] whole wheat flour
  • 3 cups [750 mL] spinach leaves, grossly chopped
  • 1 cup [250 mL] cottage cheese
  • 1/2 cup [125 mL] bean curd, finely chopped
  • 1/2 cup [115 g] grated cheese
  • 3 tablespoons [45 mL] sesame seeds
  • Sea salt, to taste
  • Pepper, to taste
  • Into a bowl, beat together eggs and whole wheat flour, until creamy.
  • Mix in chopped spinach leaves, cottage cheese, chopped bean curd, half of grated cheese, sea salt and pepper.
  • Pour into a pan, sprinkle with remaining grated cheese, then with sesame seeds.
  • Bake into a preheated 350°F [180°C] oven for 45 minutes.
