Apple Stuffing

  • 6 tablespoons [90 g] butter
  • 2 large onions, chopped
  • 2 apples [Cortland], peeled, cored and chopped
  • 2 teaspoons [10 mL] thyme
  • 4 teaspoons [20 mL] chopped parsley
  • 1 teaspoon [5 mL] wine vinegar
  • 1 cup [250 mL] dry bread cubes
  • 1 cup [250 mL] chopped pecans
  • Salt and pepper, to taste
  • Melt butter; brown chopped onion.
  • Mix in chopped apples, thyme, parsley, salt and pepper; cook for 5 minutes.
  • Pour in wine vinegar and mix in bread cubes and chopped pecans.
  • Simmer for 5 minutes.
  • Leave to cool before stuffing.
