Fake Jellied Pork Drippings

Even though this recipe asks for beef broth concentrate instead of pork drippings as for the real jellied pork drippings recipe, it is also excellent spread on toasts.

Approximately 1 1/4 cup [310 mL]

| Ingredients | Preparation |
- 1 piece fat pork rind
- 2 teaspoons [10 mL] liquid beef broth concentrate
- 1 cup [250 mL] water
- 1 tablespoon [7 g] unflavored gelatin
- 1/4 cup [60 mL] cold water
|
- Melt fat from pork rind into a saucepan over really low heat.
- Pour in beef concentrate and water.
- Bring to a boil then remove from heat.
- Strain mixture through a fine sieve pressing to extract as much as possible of the liquid.
- Sprinkle gelatin over cold water; leave to swell for a few minutes.
- Stir swollen gelatin into hot mixture until completely melted.
- Pour into 1 bowl, or 2 smaller bowls.
- Refrigerate until firm before serving.
