Fake Jellied Pork Drippings

Comments: Even though this recipe asks for beef broth concentrate instead of pork drippings as for the real jellied pork drippings recipe, it is also excellent spread on toasts.
Servings: Approximately 1 1/4 cup [310 mL]

  • 1 piece fat pork rind
  • 2 teaspoons [10 mL] liquid beef broth concentrate
  • 1 cup [250 mL] water
  • 1 tablespoon [7 g] unflavored gelatin
  • 1/4 cup [60 mL] cold water
  • Melt fat from pork rind into a saucepan over really low heat.
  • Pour in beef concentrate and water.
  • Bring to a boil then remove from heat.
  • Strain mixture through a fine sieve pressing to extract as much as possible of the liquid.
  • Sprinkle gelatin over cold water; leave to swell for a few minutes.
  • Stir swollen gelatin into hot mixture until completely melted.
  • Pour into 1 bowl, or 2 smaller bowls.
  • Refrigerate until firm before serving.
