Maple Apple Cider Vinegar Mustard
Comments: Even though a little sweet and coarse, this delicious mustard with a subtil taste of maple is excellent served along with baked ham or roast pork.
For a shiny glaze with a hit of mustard taste, it is also possible to spread a tiny coat of this mustard over the ham or the pork10 minutes before the end of roasting time.
Servings: Approximately 1 cup [250 mL]

  • 1/4 cup [60 mL] whole yellow mustard seeds, grossly ground
  • 1/4 cup [60 mL] whole brown mustard seeds, grossly ground
  • 1/4 cup [60 mL] dry mustard
  • 1/2 cup [125 mL] water
  • 3 tablespoons [45 mL] apple cider vinegar
  • 3 tablespoons [45 mL] pure maple syrup
  • 1 teaspoon [5 mL] salt
  • 1/2 teaspoon [2.5 mL] pepper
  • Into a medium bowl, well mix together grossly ground yellow mustard seeds, grossly ground brown mustard seeds and dry mustard.
  • Stir in water, apple cider vinegar, maple syrup, salt and pepper.
  • Mix well, into a paste.
  • Transfer mustard into a really clean dry jar or bowl.
  • Tightly close.
  • Refrigerate mustard for 2 weeks before using.
