- 2 [28-ounce / 796-mL] each cans yellow peach halves
- 1/2 cup [125 mL] vinegar
- 1/4 cup [60 g] sugar
- 2 [3-inch / 7.6-cm] each sticks cinnamon
- 1/4 teaspoon [1 mL] whole allspice
- 1 teaspoon [5 mL] whole cloves
Orange Mayonnaise Salad Dressing [optional]
- 3 tablespoons [45 mL] mayonnaise
- 1 teaspoon [5 mL] orange marmalade
- Dash of milk or cream

- Drain peach halves over a casserole; reserve peach halves separately.
- Mix in vinegar and sugar; add cinnamon sticks, whole allspice and whole cloves.
- Bring to a boil and leave syrup to boil for 5 minutes.
- Add peach halves and simmer for 5 minutes.
- Pour into a covered container.
- Leave to cool completely, then refrigerate for at least 24 hours before serving, as is or along with orange mayonnaise salad dressing if desired..
Orange Mayonnaise Salad Dressing
- Just before serving, mix together mayonnaise, marmalade and milk or cream.
