- 1 cup [140 g] flour
- 3 eggs
- 1 cup [250 mL] milk
- Salt
- 1 3/4 pounds [795 g] ricotta cheese
- Cinnamon, to taste
- 1 cup [250 mL] icing sugar
- Butter
- Maple syrup [optional]

- Beat together flour, eggs and milk; add a little salt.
- Beat until smooth; set aside.
- Into a clean bowl, mix together ricotta cheese, cinnamon and icing sugar.
- Cook pancakes into a lightly buttered frypan.
- Spread ricotta cheese mixture between cooked pancakes.
- If desired, serve along with maple syrup.
