Jonathan-Style Pancakes

Comments: If you are afraid of being short of these 'best in the world' pancakes, simply double this recipe!

  • 1 cup [140 g] all-purpose flour
  • 1 cup [250 mL] 2% milk
  • 1/2 teaspoon [2.5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] baking soda
  • Pinch of salt
  • 3 tablespoons [45 g] sugar
  • 1 drop almond extract
  • 1 tablespoon [15 mL] vanilla extract
  • 2 eggs
  • Cooking oil
  • Into a bowl, whip together flour and milk.
  • Mix in baking powder, baking soda, salt, sugar, almond extract and vanilla extract; thoroughly mix.
  • Well beat in eggs.
  • Refrigerate until ready to cook.
  • Heat a frypan over high heat.
  • Pour in a few drops of oil; well cover bottom of frypan with oil.
  • Pour a little batter into hot frypan; cook pancake, over medium-high heat, until tiny bubbles appear on top.
  • Pancake is now golden brown.
  • Using a spatula, flip pancake over.
  • Cook for 30 seconds to 1 minute more.
  • Slip pancake onto a plate.
