- 1 cup [140 g] all-purpose flour
- 1 cup [250 mL] 2% milk
- 1/2 teaspoon [2.5 mL] baking powder
- 1/2 teaspoon [2.5 mL] baking soda
- Pinch of salt
- 3 tablespoons [45 g] sugar
- 1 drop almond extract
- 1 tablespoon [15 mL] vanilla extract
- 2 eggs
- Cooking oil

- Into a bowl, whip together flour and milk.
- Mix in baking powder, baking soda, salt, sugar, almond extract and vanilla extract; thoroughly mix.
- Well beat in eggs.
- Refrigerate until ready to cook.
- Heat a frypan over high heat.
- Pour in a few drops of oil; well cover bottom of frypan with oil.
- Pour a little batter into hot frypan; cook pancake, over medium-high heat, until tiny bubbles appear on top.
- Pancake is now golden brown.
- Using a spatula, flip pancake over.
- Cook for 30 seconds to 1 minute more.
- Slip pancake onto a plate.
