Cheesy Macaroni Casserole

  • 1/2 pound [227 g] lean ground beef
  • 1 medium onion
  • 1 red or green bell pepper, finely diced
  • 1 cup [250 mL] mushroom pieces
  • 2 cups [500 mL] elbow macaroni
  • 1 [32-ounce / 1-L] jar cheese marinara sauce
  • Grated Parmesan and Mozzarella cheese, to taste [optional]
  • Boil macaroni into salted boiling water until 'al dente'.
  • Meanwhile, preheat oven to 350°F [180°C].
  • Stirring, brown ground beef into a large frypan.
  • Mix in minced onion, bell pepper dices and mushroom pieces; cook stirring for 2 to 3 minutes more.
  • Drain then macaroni mix into meat/vegetables mixture along with cheese marinara sauce.
  • Transfer mixture into a 9 x 13-inch [23 x 33-cm] baking dish.
  • Bake into preheated oven for 10 minutes, sprinkled all over with grated Parmesan and Mozzarella cheese if desired.
