Easy Sun-Dried Tomatoes, Pesto and Pasta

Comments: If making a pound [454 g] of pasta you may want to add a little more pesto [maybe a 1/2 of a container] to the dish; I sometimes find it a little dry.

IngredientsPreparation
  • Up to 1 pound [454 g], to serve 8, small pasta noodles [ziti, elbows, rotini... any kind]
  • Any, choose 2 or 3, fresh vegetable pieces such as squash, green beans, carrots, cherry tomatoes...
  • 1 container basil pesto
  • 6-ounce [170-mL] jar sun-dried tomatoes in oil
  • Diced grilled chicken [optional]
  • Boil pasta noodles following packaging instructions; drain.
  • Meanwhile, steam vegetables .
  • Well mix together all ingredients.
  • Serve warm.
