Cheesy Tomato Pasta

Comments: Use enough tomatoes to make a thick sauce.

  • 8 3/4 ounces [250 g] pasta [macaroni or broken up spaghetti]
  • 4 - 5 medium-large tomatoes, finely chopped
  • 1 onion, sliced
  • 3 or 4 chillies, sliced
  • 2 to 2 1/2 cups [500 to 625 mL] cheese, grated
  • Salt to taste
  • Boil pasta.
  • Drain.
  • While it is boiling, start preparing the tomato sauce.
  • Saute onion and chillies in a little oil untill onions are translucent.
  • Add tomatoes to the onion and chillies.
  • Salt to taste.
  • Simmer for about 20 minutes or until the tomato mixture is thick.
  • Add grated cheese to the the tomato mixture and stir so as not to allow it to congeal.
  • Add the drained pasta to the mix and stir.
  • Liberally sprinkle the top with cheese and simmer on very low heat.
