Cheese and Spinach Lasagna

  • 9 cooked lasagna noodles
  • 1 can diced tomatoes
  • 1 sweet green pepper, membranes removed and seeded, diced
  • 1 small onion chopped
  • 1 small can tomato paste
  • 1/2 cup [125 mL] chili sauce
  • 2 tablespoons [30 mL] Italian spices
  • 1 teaspoon [5 mL] chili powder
  • 2 or 3 cloves garlic
  • 2 cups [500 mL] low fat cottage cheese
  • 1 package fresh spinach, washed and trimmed
  • 2 cups [500 mL] slim Mozzarella cheese, shredded
  • 1 egg
  • Salt and pepper to taste
  • With culinary robot, mix cottage cheese, spinach, egg, 1/2 cup [125 mL] Mozzarella cheese, salt and pepper.
  • Place 3 lasagna noodles in bottom of dish; cover with cheese mixture.
  • Place in oven 30 minutes.
  • Meanwhile, mix together tomatoes, tomato paste, chili sauce, onions, peppers and spices.
  • Simmer 20 minutes.
  • Cover cheese mixture with 3 lasagnas, tomato sauce, 3 last lasagna noodles and remainder of Mozzarella cheese.
  • Brown in oven ['au gratin'].
