Caruso Tortellini

Comments: Can be frozen if you add a bit of cream when reheating.

  • 1 cup [250 mL] uncooked tortellini noodles [cheese or meat]
  • 4 slices prosciutto [Parme ham] not too thin
  • 1/2 cup [125 mL] whipping cream [35%]
  • 2 or 3 pinches nutmeg
  • Salt and pepper
  • 2 tablespoons [30 mL] cognac
  • 2 tablespoons [30 mL] butter
  • About 12 ounces [340 mL]mushrooms
  • Cook tortellini according to instructions; drain and set aside.
  • In a large pan, place butter, mushrooms and prosciutto.
  • When butter has melted, add cognac and flamber.
  • Immediately add cream, nutmeg, salt, pepper and tortellini noodles.
  • Heat a bit and serve.
