Cannelloni Stuffed with Meat

  • 1 bag spinach, stems removed
  • 1/2 pound [227 g] ground pork
  • 1/2 pound [227 g] ground beef
  • 1 clove garlic, finely chopped
  • 1 egg
  • 1 large handful freshly shredded Parmesan cheese
  • 1 large handful freshly shredded Mozzarella cheese
  • 1 tablespoon [15 mL] bread crumbs
  • 1 container Ricotta cheese
  • 1 pound [454 g] boiled drained cannelloni noodles
  • Tomato or meat sauce
  • Grated Mozzarella cheese
  • Whipping [35%] cream
  • Salt and pepper
  • Rinse and cook spinach into salted boiling water.
  • Cook together ground pork and beef along with chopped garlic, stirring.
  • Really well drain then chop spinach.
  • Mix into meat mixture; leave to cool.
  • Preheat oven to 375°F [190°C].
  • Into a large bowl, well-mix together egg, shredded Parmesan and Mozzarella cheeses, bread crumbs and Ricotta cheese; salt and pepper mixture.
  • Well mix in cooled meat-spinach mixture.
  • Stuff noodles with mixture; arrange into a just large enough baking dish.
  • Pour enough tomato or tomato meat sauce all over stuffed pasta noodles to cover.
  • Sprinkle all over with grated Mozzarella cheese before pouring a little heavy cream all over.
  • Bake into preheated oven for 30 to 45 minutes, until golden brown.
  • Leave to sit for about 10 minutes before serving.
